3 - Step Barley and Pesto Salad

Today morning couldn't be more hectic. My younger son missed his bus and everyone seemed to be half asleep. I didn't even have a sip of my tea when I remembered I had to go for yoga and I have to admit it couldn't come at a more perfect time. Meditation and cooking was exactly what I needed after a busy morning. After I was back we went on with the usual routine of me asking my family what they want to eat and them replying with "anything." So I decided to whip up a simple, healthy and delicious salad. I hope you enjoy this recipe as much as I do!

  • 1 cup boiled barley

  • 1 1/2 tbsp. pesto sauce (you can try to our recipe)

  • 1/2 cup lettuce

  • 1/3 cup finely chopped lettuce

  • 1/3 cup bell peppers

  • 1/3 cup diced onions

  • 1/3 cup sun dried tomatoes

  • 1 tbsp roasted pine nuts

  • 1/2 tbsp olive oil

  • 1/2 tbsp lemon juice

  • 1/4 tsp black pepper (crushed or powdered)

  1. Mix the barley and pesto sauce together and keep aside.

  2. Till the barley is marinated we can prepare the other things. (Start chopping all the ingredients as the ingredients list states.)

  3. Now mix everything including the barley mixture. Now grab a big bowl and create a layer of lettuce in the bottom. Place the prepared salad on top of it.

*If you want you can garnish with pine nuts
