Hey there!! People love cheddar, but zucchini? Not so much. But this awesome recipe even makes zucchini look good. Give it a shot!
It's such an easy recipe to make! The zucchini plays the part of a pizza base (a healthier and tastier pizza base!)
With just a few ingredients you can make such an amazing pizza. It's a very quick recipe, but amazing in taste.
We have to try zucchini in two shapes one is round and one is a rectangle shape. For us, both the shapes look good but it's totally up to how you want.
To bake zucchini for a few minutes before spreading your sauce on it is very important. Because zucchini get very soft if we will bake it too much. So we decide to break the recipe in intervals.
So let's start with the recipe!
Cheesy Zucchini Bites
Servings: 8 pieces
2 tbsp. pesto sauce
1 1/2 tsp. schezwan sauce
2 tsp. tomato sauce
1 tbsp. olive oil
1 1/2 tsp. cream cheese
2 tbsp. cheddar cheese, grated
1 tsp. mixed herbs*
1/2 tsp. salt, to sprinkle
1/2 tsp. crushed black pepper
First, wash your zucchini nicely with water. Cut 8 round slices of zucchini about 2cm equal in size with the help of a sharp knife.
Preheat your oven at 180 degrees Celsius and put parchment paper on your baking tray.
Now brush your zucchini slices with oil with the help of a brush. Sprinkle little salt n pepper on top of each zucchini slice.
Place each slice on a baking tray keeping some distance between each slice and bake for 15 minutes.
Meanwhile, let's make a creamy sauce to out on grilled zucchini slices. Take a small bowl to add pesto sauce, cream cheese, ketchup, and schezwan sauce. Mix it properly.
Now after 15 minutes take out your zucchini slices from the oven, let it cool for 2 to 3 minutes. Pour about 1 tsp of creamy sauce in the middle of each slice, spread it nicely with the help of a spoon.
Add some cheddar cheese on sauce spread and sprinkle mixed herbs on top of it.
Keep it again for baking at 180 degrees Celsius for more than 5 minutes.
