Merry Christmas Eve! This year definitely could use a dose of Christmas & New Year's! With everything that's happened, I can't think of a single person who isn't looking for a bit of a fresh start :)
Anyways, do you love the classic pairing of bread, jam & butter?
This recipe is a combination of all three put into one snack. One of the best things about this snack is that the biscuits themselves have no primary flavor so you can dip em' in any jam you want!
Note this down!
We have used yogurt, milk, and lemon juice here but if you have buttermilk you can use that also. Again one thing we want to remind you is that the butter you can use any but it should be cold. As we are not adding any specific flavors or spices to the biscuits so you can eat these biscuits with any flavor jam or salted butter.
Classic Buttery Bicuits With Jam
1/3 cup milk
4 tbsp yogurt
2 tbsp lemon juice
2 1/2 cup plain flour
1 tsp baking soda
11/2 tsp baking powder
100 gm cold butter
1 tbsp melted butter for brushing
1/4 tsp flaky salt for garnishing
Preheat the oven to two hundred Celcius. First, we have to make buttermilk, for that we will mix yogurt, milk, and lemon juice together. Keep this aside.
Now we will add the dry ingredients to a bowl and whisk them together. Grate the frozen butter in a bowl and mix it roughly with the hands, do not knead too much.
Roll the dough and divided it into four equal parts. Layer all the pieces of the dough on each other. Now roll this dough with the rolling pin gently into a 16 by 20 cm rectangle and the thickness should 2.5 cm. Cut them into 12 equal squares.
Brush these pieces with the melted butter and sprinkle the salt on them. Place these pieces on the baking sheet and bake it for 15 to 20 minutes.
We can serve these salted butter cookies with herbs butter or a jam.
