Hey there! Today we are sharing our second recipe from our IG Live with Sami. This recipe is a corn salad with a Thai twist. This recipe is soooo simple and amazing. The best thing about Thai food is that it is a mix of spice and tang. Whenever we are having Thai food we always keep a glass of cold water nearby because we are NOT fans of spicy food.
Let's talk about the corn salad now! First, try using fresh corn! In our blog, we are always trying to promote fresh and wholesome foods because they are so much healthier! However, if you are in a bind canned corn also works fine...
2 raw corn
1/4 cup cabbage, Julienne cut
1/2 cup tomatoes, Julienne cut
1/4 cup cucumbers, Julienne cut
2-3 garlic cloves
1 or 2 thai chilies
1 tbsp. soya sauce
1 tbsp. thai jaggery or 1 tbsp. brown sugar
1/4 tsp. salt
1tsp. lime juice
1/2 tsp. tamarind paste
1tbsp. peanuts, coarsely ground
1/4 cup Thai basil
Mint leaves, according to you
Chop your corn and boil it. Don't make it very soft!
Take a mortar and crush your garlic and chili together than add your soya sauce and jaggery in it as well. Mix everything very well so the jaggery dissolves.
Now add salt, lime juice, and tamarind juice in the mortar as well and continue mixing.
Now add all of your chopped veggies and fruit(s) in the mortar (carrots, cucumber, cabbage, and tomatoes) and gently pound the veggies in it. You only want them to be slightly juicy.
Now take this mixture in a big bowl and now add your corn and thai basil in the bowl.
Mix everything together and sprinkle your peanuts OR mint leaves and enjoy!
