Guacamole Nachos Sandwiches

Hey you! We know that we are walking through this unusual phase in life and you are probably either working from home or learning through Google Classroom but that doesn't mean you stop eating awesome (homemade) food!

We probably have never said this before but on the main reasons we started this blog in the first place is because of the lack of people who either don't like or know how to cook at home! Home cooking is SO IMPORTANT which is why we are hoping that you will learn as many recipes as you can without feeling overwhelmed :)

Today we are sharing a recipe that is - well, interesting. We have had some unique reactions when we tell people about this recipe but we always have pleasing and happy results!

This recipe is broken into two parts, the guac and the actual sandwich (the guac will be added inside)

Guacamole Nachos Sandwiches

The first thing we want to make is the guac(amole):

Ingredients for Guacamole:

2 avocados, ripe

1/4 cup onions, chopped

1/4 cup tomatoes, chopped

1/4 tsp cumin seeds, ground

1/4 tsp salt

1/2 lemon, squeezed

  1. Peel of your avocados skin and mash your avocados with a fork or hand grinder. (We use a fork because it gives a better texture)

  2. Now add onions, tomatoes, salt, lemon juice, and cumin powder inside your mashed avocados and mix everything together with a light hand.

  3. Your guac is ready!

(Set it aside for now)

Awesome! Now let's make the sandwiches:

2 panini bread

2 slices of cheddar cheese

1 tbsp guacamole dip (use the recipe above!)

1 onion, sliced

Lettuce, roughly chopped

1/4 cup nachos, crushed (into big pieces)

1 tomato, sliced

A few slices of cucumber

A few pieces of jalapenos (optional)

  1. Preheat your oven at 180 Degrees Celcius.

  2. Slice your Panini Bread in half (not completely!) so it becomes like an open book.

  3. Put one slice of cheese on your bread and put it in your oven for 2-3 minutes until the cheese melts.

  4. Take the bread out of the oven and open it like an open book and spread some guacamole on top.

  5. Now add some tomatoes, jalapenos (optional), cucumbers, and lettuce on top of the guac as well!

  6. Now add a layer of your nachos on top as well (make sure they are not powdered but not too big!)

  7. Close up your sandwich and enjoy eating!

Note: If you are a ketchup lover you can include that as well!
