Hey there! How are you doing? If you remember, around a week ago we told you our awesome sundried-tomatoes recipe. Today we will be taking our sundried-tomatoes and making a pickle out of them! This pickle is one of our favorites and we hope you like it too!
First, gather your ingredients:
1/2 cup sundried tomatoes
1/3 cup olive oil, extra virgin
1/2 tbsp balsamic vinegar
1/2 tbsp vinegar, white
1/2 tbsp mixed herbs*
1/2 tsp salt**
1. Put your sundried tomatoes in a mason jar or bottle.
2. Now add olive oil, balsamic vinegar, white vinegar, mixed herbs, and salt in it
*In mixed herbs, we have used an equal amount of dry oregano, parsley, and chili flakes and mixed them together. You can also find bottled mixes in stores!
**As our sundried tomatoes are salted, so we have a little amount of salt. If your sundried tomatoes are not salted you may have to adjust your salt measurements!
If you want your pickle to last for 1 month you have to keep it in an airtight jar or bottle!
Here is the finished product:
